A few years back we had a Po Boy from a local restaurant that come to find out was not a conventional Po Boy…
Years ago we had a Po Boy that was good and was our first Po Boy ever, and this was what they call a Traditional sandwich…
It was our first and was our last up until this modernized version we were blessed to have had…
This restaurant was all about New Orleans, or as they liked to call themselves, Nawlins (not the name of the restaurant)…
They had an incredible menu and everything they made was to perfection, ohhhh to per-fec-tion…
Unfortunately, we saw a flaw in their business design and knew they were going to go out of business…
Sure enough we had an insatiable appetite for their Shrimp Po Boy and went there only to find out they were out of business…
Not a surprise to us, obviously, a disappointment for sure and has left us salivating for a Po Boy ever since…
Time had passed, memories have faded and days have blended into another as they do, until one day…
A friend of ours told us about a hole in the wall Grocery/Deli that made Po Boys and we were alive once again..,
For two days all we thought about was this sandwich and even had to leave work early in order to make it there on time, but tragedy had struck again…
They had to close down the Deli, not because they couldn’t sell em, it was because they couldn’t find good help…
They had one girl that did more work than 4 guys could and when she had to leave the states is when he closed up shop and got rid of the 4 guys…
He’s not out of business, he’s just running the grocery store now, with 3 people he can trust and couldn’t be happier..
We’re happy for him, and he’s selling all the ingredients that he used in his Po Boy with recipes, that’s cool…
However, that doesn’t do us any good at the moment because he’s in restructuring mode and doesn’t have all the ingredients yet…
So a little bird told us about another restaurant in town that did Po Boys and the clouds lifted and the sun appeared once again…
This is when we realized why the first Po Boy didn’t really stand out to us as the best sandwich we’ve ever had…
It was good don’t get us wrong, just nothing really spectacular, fried crab, lettuce and tomato and mayonnaise yay…
What made the Nawlins place stand out to us is that they sautéed everything and the flavor was seared into it, you didn’t need to add a thing to it, it was perfect…
Look, we appreciate tradition to the craft, however, sometimes you need to expand your horizons a bit…
It’s simple really, you can only eat so much of the same before getting tired of it…
Sure, it’s nice to have familiarity and to go back to relive that experience you once shared with that meal, but sometimes the memory is better than the meal…
Example, we went back to a place we used to go to as a kid to have the rellenos that we loved then…
The ownership was the same and the siblings were now running the show and the menu was the same, but it just wasn’t as good as we remembered…
The same could be said about the Po Boy, but of course our first experience wasn’t memorable enough to want us wanting more, but the new version of this sandwich could be…
That is, if it doesn’t take us a lifetime to find it again…
Don’t be afraid of change, we’ve told you how to evolve and how to remain pertinent so embrace it, but never forget…
